Prebiotics vs. Probiotics: What's the Difference?
The two words are easy to mix up. Here are the formal, expert-consensus definitions of each, and how fermented foods fit alongside both.

The words "prebiotic" and "probiotic" show up on packaging constantly, often side by side, and they're easy to mix up. They describe two different things, and the mix-up isn't just semantic — one is a living organism you consume, and the other is food for organisms already living in you.
The official definitions
Both terms have a formal scientific definition, set by expert consensus rather than by marketers, and it's worth starting there.
A probiotic is defined, per the Food and Agriculture Organization of the United Nations and the World Health Organization, as "live microorganisms which when administered in adequate amounts confer a health benefit on the host." That definition was reaffirmed and clarified in a 2014 consensus statement from the International Scientific Association for Probiotics and Prebiotics (ISAPP), an expert panel convened to keep the term's use consistent across research, regulation, and product labeling. The key word is "live" — a probiotic has to be a living organism, present in an amount shown to do something, not just any bacteria that happens to be in a food.
A prebiotic is defined differently. Per a 2017 ISAPP consensus statement led by Glenn Gibson, one of the researchers who helped originate the concept, a prebiotic is "a substrate that is selectively utilized by host microorganisms conferring a health benefit." In plain terms: a prebiotic isn't alive. It's a substrate that serves as food for microorganisms already living in your gut, selectively feeding some of them in a way that's been shown to confer a benefit. Many of the substances established as prebiotics so far are fermentable carbohydrates — fiber-like compounds such as inulin and certain oligosaccharides — but the ISAPP definition itself isn't limited to fiber: anything meeting the two-part standard, selective utilization by host microorganisms plus a demonstrated health benefit, can qualify.
The distinction in one sentence
A probiotic adds living organisms to your gut. A prebiotic feeds the organisms that are already there. They're often discussed together because they affect the same system, but they are not interchangeable, and a food can contain one, both, or neither.
Where fermented foods fit in
Fermented foods sit in a related but distinct category, and the same ISAPP expert panel addressed this directly in a separate 2021 consensus statement. That panel defined fermented foods as "foods made through desired microbial growth and enzymatic conversions of food components" — a broad category that includes yogurt, kimchi, sauerkraut, and kombucha, among many others. The panel was explicit that fermented foods and probiotics are not the same thing: a fermented food may or may not contain live microorganisms by the time it's eaten (some are heated or filtered afterward), and even when it does, those microorganisms have not necessarily been shown, per strain and dose, to confer a specific health benefit — the requirement that defines a true probiotic.
What this means in practice
None of this is a reason to avoid fermented foods, prebiotic fiber, or products genuinely containing live, studied probiotic strains — it's a reason to read labels with the actual definitions in mind rather than treating the words as interchangeable marketing terms. A yogurt with "live and active cultures" is describing a fermented food that contains live microorganisms; whether a specific product meets the formal definition of a probiotic depends on the strain and the evidence behind it, which isn't something a general article can verify product by product.
Foods like legumes, oats, and many fruits and vegetables provide fermentable fiber that gut bacteria break down, which is the same general mechanism the ISAPP definition describes. But containing fermentable fiber isn't the same as meeting the formal definition — a substrate only counts as a verified prebiotic once it's been shown to be selectively utilized by specific microorganisms and to confer a demonstrated health benefit, not simply because it's fiber that bacteria happen to ferment. Whether any particular food meets that bar is a separate, narrower question than whether it contains fermentable fiber generally.
